Koji & Miso Production week. It was great to see some sunshine this week 🌞 It's supposed to be cold again this weekend. We hope you have a warm and cozy weekend 🤗

Our kiddos went back to school this Monday after the holiday vacation. I'm back in the kitchen and have been busy with the first production of Koji and Miso of 2026, also getting ready for @bfmvermont for this Saturday, 1/10.

There are two different ways to write Koji in Japanese--麹 and 糀. Each is pronounced the same.

This version--麹--originated from China and was adopted in Japanese. It refers to Koji made from gains like rice, barley and soybeans.

The other--糀--origin
